Spicy Sesame Chicken Breast



Marinade:


1. Sprinkle the chicken breast with salt and pepper. In a bowl, mix together the melted butter, soy sauce, wine, tarragon, and mustard. Arrange the chicken breasts in a single layer in a shallow glass or ceramic dish. Pour on the marinade, and let stand at room temperature for at least 2 hours.

2. Prepare the grill or heat the broiler. Starting with the bone side toward the heat, cook 7 to 9 inches from the coals for 4 to 5 minutes on each side. Baste the chicken breasts and turn several times during the cooking process.

3. Just before the chicken is done, remove from the fire and roll in the sesame seeds until well coated; return the chicken breasts to the fire for 2 to 3 minutes, or until the seeds have browned but are not burned.
